Wine of the Month: 2003 Walla Walla Syrah - Friday, December 28, 2012

Winemaking:
The grapes from our Vintners Estate vineyard influence the mouth feel and texture of this bold Syrah. Sixty percent comes from Vintners Estate, embracing two clones – Joseph Phelps and Tablas Creek. The remaining 40 percent comes from Morrison Lane vineyard. This memorable Syrah is jammed-packed with black pepper from nose to finish. The center of the flavor profile is all about Madras curry, allspice and clove with an ending of spicy chutney. This remarkable Syrah is a testament to our own estate vineyard and Walla Walla. A word to the wise---because of limited production our popular Syrah’s consistently sellout quickly and this excellent wine will be no exception.

Tasting Notes

The 2003 vintage was outstanding in the Walla Walla Valley. This is a delicious, full-bodied wine with a touch of smoky spice and black fruit aromas on the nose. Concentrated flavors of cherry and blackberry, with a smooth tannin structure tease your palate. An elegant wine with abundant flavors that persist long after the wine is gone.

Chicken and Cheese Casserole


This simple layered dish makes dinner a snap!
Ingredients
• 2 or more thin chicken breasts
• 1 C. marinara sauce
• 2 C. multi-cheese mozerella, romano, cheddar
• 1 C. bread crumbs, cornflake crumbs, or flour
• 1 Tbs. Italian spices
Directions

Preheat oven to 400 degrees. Oil baking pan with olive oil. Put chicken breasts on bottom of pan cover with bread crumbs. Add marinara sauce and sprinkle with spices. Add cheese on top. Cover and bake for 30 minutes.
